All RPG's I've played so far are all turn based and vary difficult for me and they make me lose interest vary fast. I currently need a guide for 99% of the ones I've played in the past. and I don't like games that I need to read about how to play them, I like pick up and play games.
I love the Pokemon series. I wish I could play the original Zelda without the bad guys constantly firing projectiles at me I think I played the original Zelda game for NES but the NES classic has a turned up difficulty and I hate it.
Does anyone know an easy retro/older RPG or open world game? I have a few of them but I hesitate to play them because they are so hard for me to understand.

Retro, easy and open world? Those three usually don't combine. Although, Final Fantasy VI's second half is very, very lite open world.
Otherwise, some easy RPGs on SNES and/or Genesis are:
Chrono Trigger
Breath of Fire
Final Fantasy VI
Secret of Mana
Beyond Oasis
Phantasy Star III
Final Fantasy Legend III

Super Mario RPG: Legend of the Seven Stars on SNES is your best bet here.

Also, while not retro, there are the Knights of Pen and Paper games, which are RPGs where you're a bunch of players playing an RPG. The big thing is that you can make the difficulty whatever you want for that.
And if you consider the 360/PS3 era to be retro now, you have the Elder Scrolls, Fallout, Dragon Age, and Mass Effect series, where the difficulty can be turned down to a cakewalk.

Great question. the pokemon series is one of the easiest I have. Paper Mario comes to mind.

Final Fantasy Mystic Quest was created with audiences like you in mind.

For games that have a Zelda style:
Willow (NES)
Secret of Mana (SNES)
Illusion of Gaia (SNES)
I can also recommend
Lunar Silver Star Story Complete (PS1)
Lunar Eternal Blue Complete (PS1)
Final Fantasy Mystic Quest (SNES)
Those are all easier than the normal RPG, while still having a great story to keep your interest.

I personally would not consider Secret of Mana easy but that's just me. I found it relatively challenging and grindy.

Final Fantasy VII is pretty easy excluding a couple bosses, and even then it's just basic preparation. Rarely do you get dealt with something you can't beat without tools at hand. Only one boss can softlock you if you aren't high enough levelled.
The Mario RPG games are fun and not too difficult IMO.
Final Fantasy IV isn't terribly difficult.

Maybe it's just me. I never had trouble with it. Keeping the Sprite alive was the biggest challenge.

I just remember it being really easy to get combo'd to death and the only real sure fire way to win fights is spam magic a lot.
But I also could have been really bad at it xD

I’d say it’s easy... once you get the hang of it. However, it is a pretty steep learning curve in the beginning, which might be counter to the question being asked.

Dragon Warrior/Quest I is pretty short and straight forward. I'd recommend playing the SNES, GBC, or mobile ports of the game over the NES version. If you have the time, you can beat the game in a day or two.

Skyrim with the difficulty turned all the way down in settings and you playing as a sneak archer.
