Would anyone here know off hand what the difference between the PS4 and PS5 versions would be?

Separate trophy lists and the PS5 version runs and loads a bit better. That's usually the only differences between non-massive games that release on both generations.

There are no differences (https://www.gematsu.com/2022/11/teenage-mutant-ninja-turtles-shredders-revenge-coming-to-ps5-on-november-15) regarding the game itself. Like what was alluded to above, there are separate trophy lists (PS4 (https://psnprofiles.com/trophies/16696-teenage-mutant-ninja-turtles-shredders-revenge), PS5 (https://psnprofiles.com/trophies/19379-teenage-mutant-ninja-turtles-shredders-revenge).)
