Knights of the Old Republic 1 & 2
Star Wars: Battlefront 1&2
Psiops: The Mindgate Conspiacy
The Simpsons: Hit & Run
All 3 Prince of Persia games
Red Dead Revolver
and Voodoo Vince

The XBox is REALLY good for compilations (you can also mod it... but yeah)

X-Men Legends is one of my favorites.
Also, even though everyone has played it, Halo is good. I was about 12 years late to the party. And as someone who thought it was a crap brofest. It is a really good and nerdy game.

If you like RPGs, then there's lots to be had on the PS2. I would highly recommend Disgaea: Hour of Darkness, Persona 3 FES, Persona 4, Shin Megami Tensei: Nocturne, and Final Fantasy XII, just to name a few. If you like fighting games, Guilty Gear XX Accent Core Plus is pretty awesome.

Xbox
Even though it's been released I actually prefer the xbox original version of doom 3.
Otogi is a fun action-platformer pretty dated but fun.
Gunvalkyrie awesome sega game
jade Empire is good too if you like Bioware games
also if you don't have it yet check out Alien Hominid... I love that game and it never seems to be mentioned a lot. It came out on GC,Ps2 and Xbox.

PS2 is boss for co-op dungeon hack and slashers. Baldur's gate I & II, Champions of Norrath/Return to arms and Gauntlet Dark Legacy.

Dragon Quest VIII is my favorite DQ game out there.

Driving as Grandpa is the best:

Ralph is my favorite. When he counts down to start a race, "5-5-5-4!"  He makes me laugh every time.

There was a snow boarding game that I think was an xbox launch title, (don't recall for sure), that remember having a crap ton of fun with. You do a custom soundtrack too which was quite different at the time. Gonna have to look it up, but it was a great game.

EDIT: Amped, that was the name. Really loved that game.
