I admit I was not a fan of Castlevania series since I was born in '88 and was more interested in Super Mario and Sonic the Hedgehog until much later in life (when Symphony of the Night was released for PS/SAT specifically) I also disliked many big-budget titles that were released, and First-Person shooters in general. I'm an arcade kid at heart. That being said, here are a few games that defined (most enjoyed/replayed) the way I play for each system;

Well to be honest, I do own a sealed copy of Titanfall for the 'bone. But that is just because Gamestop had a copy of the Collector's edition with the hardcover book and huge-honkin' statue for a hair over $100. I bought the game for PC to actually play. :P

Here is my reasoning for buying the Titanfall Collector's Edition, even though I don't have an Xbox One. Bear in mind, I have major OCD about this stuff!
I like the premise of Titanfall. I live the developers. I've heard nothing but good things about it and already know that the sequel would be coming to the PS4 and that I will undoubtedly buy it. So when I found out that Gamestop had a significantly marked-down, new in box CE, I had to have it. I wanted in on that "ground floor" so to speak. To get the hardcover art book that shows the passion the developers poured into making the game. To have that giant, hulking Titan statue in all it's light-up LED glory. And finding the PC version for $8.88 at Walmart.com meant that I could play the game. Now, I don't feel like I missed out at all.
As for the Xbox One, it is well documented (or ranted about anyway!) on the forums why I loathe and despise Microsoft and won't support their nonsense. I've learned to "never say never" and down the road like you, a sub-$200 'bone with bundled games and a ton of used games at Gamestop under $5 a pop may sway me. As of right now though, the only game I would play is the Rare Replay. I might just pick that up anyway on Black Friday for twenty bucks at Wallyworld, then download all the games that are on it and run them on an emulator. Putting up with emulation glitches and such is a small price to pay for the smiting.

I recently picked up an NES, a console which was almost a part of my childhood alongside Super Mario Bros. 3, unfortunately I was way too young to have any say in on the fate of that console. I only vaguely recall playing N64 & some Game Boy games with friends. I remember a bit of Mario Party, Banjo Kazooie (washing machine transformation) the start of Banjo Tooie and a friend fighting ganondorf in Ocarina of Time I distinctly remember running down the steps with Zelda after beating him.

Also, I don't know if it shaped my way of playing in any way, but the only games that really had a lasting emotional impact on me in recent years and made me probably change my way of thinking a little bit were the three Mass Effects.
Actually, back in school when visiting friends we played so much stuff on PS and PS2, I suppose even without owning them these games shaped my gaming habits in some way too...
