While there's lot of catchy stuff in many games, my favorite tends to be rock and metal tunes.

-Guilty Gear soundtracks are usually top tier.
-Brutal Legend had both a great OST and also over 100 of basically the best metal has to offer.
-Hyrule Warriors I use to think had a better soundtrack, but the more I play nowadays, the more I find that they overdid the snare hits like god damn crazy.  Still can get pretty good.
-The new Killer Instinct stuff is great.

These come to mind off the top of my head:

Super Mario World - Athletic Theme, Credits Roll
Super Mario 64 - Koopa's Road
Donkey Kong Country 2 - Stickerbush Symphony, Forest Interlude, Mining Melancholy
Zelda: Link to the Past - Dark World, Death Mountain / Skull Woods
Zelda: Ocarina of Time - Hyrule Field, Fire Temple (original w/ chanting)
Metroid Prime - Magmoor Caverns, Phendrana Drifts Depths
Mario Party - Mario's Rainbow Castle
Mega Man 2 - Heat Man, Dr. Wily Stage 1 and 2
Mega Man 3 - Stage Select, Snake Man
Mega Man X - Spark Mandrill
Castlevania 2: Simon's Quest - Bloody Tears
Metal Gear Solid 2 - Yell Dead Cell
Ultimate Doom - Hell Keep
Doom 2 - Shawn's Got the Shotgun
Half-Life 2 - You're Not Supposed to Be Here

^Also, love the new reworking of the Killer Instinct theme.

I find that good soundtracks are an impetus for good games. If the soundtrack is good then the game is usually good, too, and games with forgettable soundtracks are usually not as good either. Not always though...

Best, hands-down, is Brutal Legend. So much fantastic metal!

As for original soundtracks, #1 goes to Lords of Thunder on TG-CD and Sega-CD, in my book. Amazing good, guitar-driven hard rock themes that fit the style of this atmospheric fantasy shoot-em up perfectly. Go to YouTube and check it out if you're a fan of hard rock at all, you won't be disappointed. Better yet, play the game, it's easily one of my favorite shoot-em ups. It was on Wii Shop (but that's no more), don't know if it was ever brought to Wii U, 3DS, or Switch.
