Here's how I tend to go about it-
If a game is too easy, I will play it, beat it, and never pick it up again. Why bother when you've already 'mastered' it?
If a game is too hard, I will rage quit and never beat it. I have many more games I can play, why waste time on one that demands hours of repeated attempts to land the one that will grant me access to more game?
The games that hold are the ones that manage that tightrope walk of easy vs. hard... where I don't feel frustrated by a lack of progress, but I also don't feel like I can check my texts while playing becuase it's so easy (or so automated). The kind where I can beat the game, breeze through early areas to help newer players & feel like an amazing pro- while knowing those last few challenges to complete the game fully are beyond my abilities. Maybe though, if I play just a little more, I can do it.
It's not an easy thing to pull off, but when it happens? That's gaming gold right there.
