I loved the airport in III and VC. I used to fly the Dodo in III so much that I eventually was able to fly it nonstop for upwards of 15 mins.

Most recently, the Crystal Cave in Dark Souls. I just remember being there and feeling like I really discovered this hidden world. The immersion was just awesome.
