With all due respect to Paarthurnax, my favorite is probably Tyris Flare's dragon magic from Golden Axe.

That first boss fight in Phantasy Star Online on the Dreamcast blew my mind back in the day. I wasn't expecting anything like that.

Easy one for me. Singe from Dragon's Lair. When dragons in video games went from Adventure's ducks of doom to a Disney quality dragon overnight it left an indelible impression on me.
